This Minty Sunshine Juice is Fresh, Light and SO YUMMY.

Question: Ever had one of these (non juicing) situations? It’s 6 pm and not one healthy thing has passed your lips (zero judgement). Everything’s going on, you’re doing 5 things at once and you’ve still not made dinner. ME TOO!

That’s why I’m loving these simple juice recipes. 2 minutes from juicer to glass and DONE. Here’s to having one of those feeling-really-good-about-yourself-moments.

This Juice is:

  • Bright
  • Slightly Sweet (just a little)
  • Suuuper Refreshing (thank you mint)
  • So Nutritious
  • Needs only 3 simple ingredients

Minty Sunshine Juice Recipe

As usual, here’s some of the Healthy Info:

Carrots are King when it comes to Juicing. They yield maximum juice and are loaded with everything. Also, Science shows that the Bioactive Compounds in Carrots are Anti Bacterial, Anti Fungal, Anti Inflammatory and Anti Cancer.

Oranges and Carrots are both packed with Vitamin C and Carotenoids. These Antioxidants protect against Free Radicals, Boost the Immune System, Reduce Inflammation, Protect Against Heart Disease and Support Eye Health.

Mint has been used traditionally for centuries to alleviate Stomach Cramps and Indigestion by calming the digestive tract. It’s also a good source of Immune Boosting Vitamin C. And it really does keep your breath fresh!

Here’s all you need to make it:

  • Fresh Mint Leaves (can sub for Basil/Spinach/Parsley)
  • Oranges
  • Carrots

And the steps:

  • Wash the produce and peel the oranges (leave as much of the white pith on as possible – that’s where a lot of the nutrients are).
  • If you are using a Fast Juicer, keep your Juicer turned off. Put the oranges into the chute, followed by the mint, then press down tightly with the plunger before Juicing.
  • Then Juice the carrots.
  • Pour over ice and enjoy!

Additional Time: 1 minute
Total Time: 3 minutes

Fresh, Light and SO YUMMY. All you need is 3 simple ingredients and 2 minutes to make this liquid Sunshine!

Ingredients

  • large handful of mint leaves
  • 2 large oranges or 4 mandarins
  • 4 large carrots

Instructions

    1. Wash the produce and peel the oranges (leave as much of the white pith on as possible).
    2. If you are using a Fast Juicer, keep your Juicer turned off. Put the oranges into the chute, followed by the mint, then press down tightly with the plunger before Juicing.
    3. Then Juice the carrots.
    4. Pour over ice and enjoy!
